Ingredients
1/2 cup protein pasta
1 cup kale, finely chopped
Juice of 1/2 lemon
1/2 purple onion, finely diced
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
1/4 cup mayo
Cherry tomatoes, halved
Mozzarella pearls
Salt & pepper, to taste
Instructions
Prepare the protein pasta according to the package instructions. Once cooked, drain and rinse under cold water to cool.
In a large bowl, whisk together the mayo, lemon juice, garlic powder, onion powder, dried oregano, and salt and pepper.
Add the cooled pasta, chopped kale, diced purple onion, cherry tomatoes, and mozzarella pearls to the bowl. Toss everything together until well coated.
For the best flavor, cover and refrigerate for at least 30 minutes before serving.
