Lemon brings life to any dish. It cuts through richness, enhances natural flavors, and adds that fresh, citrusy brightness that makes meals feel lighter without sacrificing satisfaction.

Lemon Butter Garlic Pasta with Chicken Recipe

Ingredients

SERVES 2-3

Prep Time 10 minutes

Cook Time 15 minutes

Total Time 25 minutes

8 oz spaghetti

1 large lemon (zest + juice)

1 cup fresh spinach

1 grilled chicken breast, sliced

2 tablespoons olive oil

2 tablespoons butter

3 garlic cloves, minced

1/3 cup crumbled feta cheese

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon fresh ground pepper

1/2 teaspoon dried oregano

2 tablespoons fresh parsley, chopped

Directions

  1. Bring a pot of salted water to a boil and cook spaghetti according to package instructions. Reserve 1/2 cup of pasta water before draining.

  2. Zest the lemon first, then squeeze out the juice. Set aside.

  3. In a large pan over medium heat, add olive oil, butter, and oregano. Once melted, add minced garlic and sauté for about 1–2 minutes until fragrant (don’t let it burn).

  4. Stir in the lemon juice and zest. Let it simmer lightly for about 1 minute.

  5. Add the drained pasta and spinach to the pan. Toss everything together until the spinach begins to wilt. Add a splash of reserved pasta water if needed to loosen the sauce.

  6. Toss in the sliced grilled chicken and mix until evenly combined.

  7. Turn off the heat and sprinkle feta cheese over the pasta. Gently toss.

  8. Add salt andfresh ground pepper to taste. Sprinkle in some fresh parsley right before serving. This keeps it bright and fresh and gives that clean spring finish.

    Serve immediately.

Tips for the Best Flavor

  • Use fresh lemon—bottled juice won’t give you the same brightness

  • Don’t skip the lemon zest—that’s where a lot of flavor lives

  • Add pasta water slowly to control the sauce texture

  • Finish with feta off heat so it softens without fully melting

A Simple Way to Eat with the Season

Eating seasonally doesn’t have to be complicated. It can be as simple as choosing ingredients that naturally align with how your body feels during that time of year.

Spring calls for meals that are:

  • Lighter

  • Fresher

  • Easier to digest

  • Still satisfying

This Lemon Butter Garlic Pasta does exactly that. It’s a reminder that healthy, balanced meals don’t need to be restrictive—they just need to be intentional.

If you’re looking for a go-to spring recipe that feels elevated but comes together quickly, this is it.

It’s the kind of dish you’ll come back to—not because it’s trendy, but because it works.
