Ingredients

Chicken

  • Chicken breast (sliced in half)

  • Kinders all-purpose seasoning

  • Tomato (for freshness)

  • Green onions (finely chopped to garnish)


Broccoli Spinach Potato Purée

  • 1 cup of broccoli florets

  • 1 cup of spinach

  • 2 russet potatoes

  • 3 tbsp of olive oil butter

  • Salt and pepper (to taste)


Directions

Chicken Preparation

  1. Marinate the chicken with Kinder's all-purpose seasoning and let it sit for a few minutes to absorb the flavors.

  2. In a medium heat pan, add a drizzle of olive oil and cook the marinated chicken until it turns golden on both sides.

  3. Transfer the cooked chicken to a preheated oven at 350°F (175°C). Bake the chicken for about 15-20 minutes until it’s fully cooked and tender.


Broccoli Spinach Potato Purée

  1. In a pot, combine 1 cup of broccoli florets, 1 cup of spinach, and 2 russet potatoes (peeled and chopped). Boil them together until they become soft.

  2. Once the ingredients are soft, drain most of the water, leaving about ½ cup behind. Transfer the boiled ingredients to a blender.

  3. Add 3 tablespoons of olive oil butter, salt, and pepper to taste. Blend the mixture until smooth and creamy.


Serve & Garnish

  1. Spoon some of the Broccoli Spinach Potato Purée onto a plate.

  2. Slice the baked chicken and place it on top of the purée.

  3. Add some fresh tomato slices for a burst of color and flavor, and sprinkle chopped green onions on top for a nice finishing touch.
