Instructions
Cook the rice according to package instructions. Fluff with a fork and set aside.
Prepare the tomato topping – In a small bowl, mix diced tomato, cilantro, and lime juice with a pinch of salt.
Cook the ground beef – In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat, then season with cumin, chili powder, garlic powder, salt, and pepper. Stir well and cook for another 2 minutes.
Cook the corn – In a skillet over medium heat, cook the corn until it golden or charred.
