For those days when you’re juggling school pick-ups, after-school activities, and homework time—this bowl has your back.
There are those afternoons when the clock hits 4:30, you’ve barely caught your breath from pick-up lines, and everyone’s already asking what’s for dinner. Between practices, homework, and bedtime routines, it’s easy to fall into the trap of grabbing something quick but not-so-wholesome. That’s where this Roasted Corn Beef Bowl steps in—it’s simple, flavorful, and comes together in no time. Even better? You can make a big batch and use it for lunches or dinners later in the week. It’s one of those go-to meals that feels like a win for both your schedule and your sanity.

Ingredients
Green leaf lettuce (base layer)
1 lb ground beef
1 tbsp minced garlic
1 tbsp Kinder’s All Purpose Seasoning (or your favorite blend)
½ green bell pepper, diced
½ red bell pepper, diced
½ white onion, diced
1 cup corn (fresh, frozen, or canned)
1 cup black beans, rinsed and drained
1 lime, sliced (for squeezing on top)
Cotija cheese, crumbled (to taste)
Directions
In an iron skillet over medium heat, add ground beef and cook until browned. Add minced garlic, Kinder’s seasoning, diced bell peppers, and onions. Sauté until veggies are tender and fragrant.
In a separate skillet, roast the corn until slightly charred for that smoky, sweet flavor.
Heat black beans in a small pot. Drain the liquid when the beans are done cooking and let them cool down.
In a bowl, layer green leaf lettuce as your base. Add the ground beef mixture, roasted corn, and black beans.
Top with a squeeze of fresh lime juice and a sprinkle of Cotija cheese.
Parent Tip
Make a double batch of the beef mixture and roasted corn—it stores beautifully! You can reheat it for lunches, quick dinners, or even stuff it into tacos or wraps later in the week.
