South of the Border Chicken Taco

We're thrilled to kick off our St Clara Lunch Box series here on the journal! Today, we're sharing one of our favorite and easy-to-make recipes, perfect for both your little ones or for those who enjoy meal prepping. Our South of the Border Chicken Taco Recipe isn't just delicious, it's also a lifesaver for those busy days when you need a satisfying and flavorful lunch on the go.


This recipe isn't just delicious—it's also perfect for lunch on the go. Pack these tacos in a lunch box for work or school, or prepare them as a convenient meal for your little ones. With their portable nature and irresistible taste, these South of the Border Chicken Tacos are the ideal choice for a satisfying and hassle-free lunch.

Ingredients

Shredded Chicken

Shredded Mexican Blend of Cheeses

Tortilla

Lettuce (finely chopped)

White Rice

Orange

Chocolate Chip Granola (Good & Gather)




Directions

Preparing the Chicken
  1. Place your chicken breasts in a large pot and cover them with water. Make sure the water level is at least 1 inch above the chicken breasts.

  2. Optionally, you can add aromatics such as chopped onion, garlic cloves, or any of your favorite herbs to enhance the flavor of the chicken as it cooks.

  3. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.

  4. Let the chicken simmer for about 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the meat is no longer pink in the center.

  5. Once the chicken is fully cooked, remove it from the pot using tongs and transfer it to a cutting board. Allow it to cool for a few minutes.

  6. Once the chicken has cooled slightly, use two forks to shred the meat. Hold one fork steady and use the other fork to pull the chicken apart into small, bite-sized pieces.

  7. Continue shredding the chicken until all of the meat is shredded to your desired consistency.


Preparing the Lunch Box
  1. Warm up your tortilla to your liking. Once it's cooled down a bit, roll it into a taco and slice it in half.

  2. Add all your taco ingredients into your lunch box. We recommend layering shredded chicken, shredded Mexican blend of cheeses, white rice, and lettuce inside each empty container.

  3. Lastly, add some sweet treats. We suggest including an orange slice (feel free to peel for your little ones who can't quite peel just yet) and a serving of Target's Good & Gather chocolate chip granola.
