Mediterranean Orzo Pasta Salad

Ingredients
16oz of Orzo Pasta
1/2 cup of Shrimp, cooked and diced
3 cups baby spinach leaves, gently torn into large pieces
1 ½ chopped red bell pepper (about one red bell pepper)
1 cup cucumber, diced and seeded (about one medium cucumber)
¾ cup red onion, diced
7 ounces feta cheese
¼ cup olive oil
1 lemon, juiced
1 ½ teaspoons fresh oregano
1 teaspoon sea salt
1 teaspoon black pepper

Directions
Cook the orzo pasta according to the package instructions. Drain and let it cool to room temperature.
In a large mixing bowl, combine the cooked orzo pasta, diced shrimp, torn baby spinach leaves, chopped red bell pepper, diced and seeded cucumber, and diced red onion.
Crumble the feta cheese over the salad ingredients in the bowl.
In a small bowl, whisk together olive oil, lemon juice, oregano, kosher salt, and black pepper to create the dressing.
Pour the dressing over the orzo salad and toss everything together until well combined. Make sure the salad is evenly coated with the dressing.
Taste and adjust the seasoning if needed, adding more salt and pepper to suit your preference.
Chill the Mediterranean Orzo Salad in the refrigerator for at least 1 hour before serving. This allows the flavors to meld together.
Serve the salad chilled, and optionally garnish with additional feta cheese and a sprinkle of oregano for a finishing touch.
