Sometimes the best recipes come from moments of love and practicality. I first made this Edamame Cucumber Salad as part of a meal prep for Santi and took it to him at work so we could sneak in a quick lunch together. Between juggling a child, work, and everything else, it’s not always easy to sit down for a meal as a couple—but this salad made it possible.


And the best part? It’s light, fresh, and keeps really well—perfect for busy parents who need something wholesome, quick, and delicious for the whole family.

Edamame Cucumber Salad Recipe

Salad Ingredients

2 large Cucumbers, diced or thinly sliced

1 cup Edamame (shelled, cooked, and cooled)

1/2 cup Parsley, finely chopped

1 bunch Green Onions, thinly sliced


Dressing Ingredients

2 tbsp Avocado Oil

1/4 cup Rice Wine Vinegar

2 tbsp Soy Sauce

1 tbsp Sesame Oil

2 tbsp Maple Syrup

2 Garlic cloves, minced

1 tsp Ground Ginger

1 tsp Sea Salt

1 tsp Sesame Seeds


Instructions

  1. Prep the cucumbers → Wash and chop into bite-sized pieces.

  2. Mix the base → In a large bowl, combine cucumbers, edamame, parsley, and green onions.

  3. Make the dressing → In a small bowl or jar, whisk together avocado oil, rice wine vinegar, soy sauce, sesame oil, maple syrup, garlic, ground ginger, sea salt, and sesame seeds.

  4. Toss together → Pour dressing over the cucumber-edamame mixture and stir well.

  5. Chill & serve → Let it sit for 10 minutes to soak up the flavors.
