This combination fried rice is our Santa Clara take: simple ingredients, balanced nutrition, and a method that actually works for real life (busy mornings, tired evenings, and everything in between).
It’s also one of our favorite ways to use leftovers and turn them into something your whole family—toddlers included—will happily eat.

2 cups cooked white rice (cold)
2 eggs

2 tbsp chopped green onion
Protein (optional: chicken, shrimp, or beef
Directions
1. Start with cold rice. Cold rice is key. It keeps the grains separate and prevents that mushy texture. If you can, use rice made the day before.
2. Heat a large pan over medium-high heat and add a small amount of oil.
Pour in the eggs and scramble until just cooked. Remove and set aside.
3. Add the remaining oil to the pan. Sauté the garlic for about 30 seconds until fragrant. Add the mixed veggies and cook for 2–3 minutes until slightly tender.
4. Turn the heat up to high. Add the cold rice and break up any clumps. Let it sit briefly before stirring—this helps create that classic fried rice texture.
5. Drizzle in the soy sauce (or coconut aminos). Mix well so the rice evenly absorbs the flavor.
6. Add the cooked eggs and your protein (if using).
Toss everything together until heated through.
7. Turn off the heat and stir in chopped green onions for a fresh, balanced finish.
