Crispy Chicken
Ingredients
3 Chicken breasts
Panko crumbs, for coating
2 eggs, beaten for coating
1 tbsp Garlic powder
Salt
Pepper
Directions
Slice the chicken breast in half or into strips or bite-sized pieces, if desired. Season both sides with salt, pepper, and garlic powder.
In a bowl, beat the eggs. Place the panko crumbs in a separate shallow bowl.
Dip each piece of chicken in the beaten eggs, letting any excess drip off, then press into the panko crumbs to coat all sides well.
Pan-Frying: Heat a layer of oil in a skillet over medium heat. Add the chicken and cook for 3-4 minutes on each side until golden brown and crispy. Ensure the internal temperature reaches 165°F (74°C). Baking:
Preheat the oven to 400°F (200°C). Place the chicken on a greased baking sheet and bake for 20-25 minutes, flipping halfway through.
Let the crispy chicken rest for a minute, then enjoy!
Mac & Cheese
Ingredients
18 oz Elbow macaroni pasta
2 cups of Milk
2 cups of Cheddar cheese, shredded
1/4 cup of Butter, melted
1/2 tsp Salt
Pinch of Ground black pepper
Directions
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain the pasta and set aside.
In the same pot, pour in the milk and melted butter. Heat over medium-low heat, stirring occasionally, until warm.
Gradually add the shredded cheddar cheese to the milk mixture, stirring constantly until the cheese has melted and the sauce is smooth. Add the salt and a pinch of ground black pepper, stirring to combine.
Add the cooked macaroni back into the pot with the cheese sauce. Stir until the pasta is evenly coated.
Scoop your mac and cheese into bowls, serve warm, and enjoy the creamy goodness!

2 tbsp of Siggi's yogurt
Blueberries, sliced
Green apple, sliced
1 tsp of Agave
Topped with Chia seeds
