Sesame Veggie Rice Bowl
Ingredients
2 cups leftover white rice
3 tbsp soy sauce
1 tbsp sesame oil (plus more if needed)
1 red bell pepper, diced
1 green bell pepper, diced
2 green onions, chopped
1 block (14 oz) firm tofu, pressed and diced
1 avocado, sliced
1 tbsp sesame seeds
Directions
Prepare the tofu: Press the tofu to remove excess water, then dice it into small cubes.
Cook the tofu: Heat 1 tbsp of sesame oil in a large pan or wok over medium heat. Add the tofu cubes and pan-fry until golden on all sides. Remove and set aside.
Sauté the veggies: In the same pan, add more sesame oil if needed. Sauté the diced red and green bell peppers and chopped green onions until tender.
Stir-fry the rice: Add the leftover white rice to the pan with the veggies. Drizzle with 3 tbsp of soy sauce and stir-fry until everything is evenly coated and heated through.
Combine: Add the cooked tofu back into the pan and gently toss everything together.
Assemble the bowl: Divide the fried rice mixture into bowls, top with sliced avocado, and garnish with sesame seeds. Serve and enjoy!
